Last Modified: Wednesday, November 18, 2009 at 6:47 p.m. Luigi's Famous Pizza and Pasta At age 16, Luigi Uzhca left his native Ecuador for the bright lights of New York City, following the path of relatives. To make ends meet, he took a job as a dishwasher at an Italian family restaurant and became enamored with the ways of the kitchen. His command of English was shaped by dishes with names like manicotti, spaghetti carbonara and gnocchi with bolognese sauce. It must have been a good fit because Uzhca stayed at the same restaurant for 27 years and became its head chef. Four years ago while visiting friends in Florida, Uzhca and his wife, Natalie, discovered Lake Alfred and decided to invest in a place of their own, at 228 S. Lake Shore Way. Together with their three children, Edwin, Jonathan and Catherine, the Uzhcas serve up many of the New York-style Italian specialties Uzhca, 48, honed over the years. WHICH OF YOUR MENU ITEMS ARE MOST POPULAR? We serve a lot of string bean salad; we put a couple of onions, fresh mozzarella, tomato and a little basil and homemade Italian dressing. I make my own mozzarella. AT HOME, WHICH DISH DOES YOUR WIFE DEMAND MOST OFTEN? Linguine with clam sauce. We use fresh clams and fresh garlic, olive oil and a little white wine. WHAT'S THE BEST THING ABOUT RUNNING YOUR OWN PLACE? I spend more time with my family now, and I have more time to share with my wife. I'm happy. That's very honest.
